100%Lab is 100%Chef’s research, creativity and development laboratory.
The Lab starts at the beginning of 2023 to be our gastronomic R&D department, and is key for us to offer the possibility of free training and advice to our customers and to cover the pedagogical function of 100% Chef and 100% Barman.
For those of us who are part of 100%Chef, 100%Lab is a dream come true: a meeting place for professionals, a house where we welcome our guests and share a kitchen for cooking with them; a classroom for learning and growth, a space for collaboration, a workshop for ideas and an area for image and communication.
100%Lab allows us to go through all these paths, detect possible needs and explore all the mistakes and opportunities hand by hand, focusing on innovation from an immediate perspective that we did not have until now. By internalizing this creative part of the work and having a team and a space committed to this objective, we are able to respond to all the questions at the very moment they arise, being much more efficient and innovative.
In addition, as a multifunctional space for exchange, collaboration and learning, at 100%Lab we reserve part of our monthly agenda to receive professionals from different disciplines for ideation, knowledge, training, consulting and creativity sessions; You will also attend a guided tour of our showroom where you will discover new and exclusive products and designs.. The purpose of Lab​

Our goal is to help chefs and bartenders to be limitless to create and work, and that is the sense of our entire catalog of machines, tools, devices, utensils, ingredients and products. With 100%Lab, we offer a research kitchen and a Bar-Experience to work with all the resources at hand: pressure emulsion and centrifugation mechanisms; presses, refiners and juice extractors; distillers and high vacuum equipment, double pressure machines, freeze-drying and dehydration instruments, fermentation, dry ice and liquid nitrogen provision, mechanical pressure plates, Japanese grills, centrifuge, 3D printing space,…. Our vision of advancing without limits implies collaborating side by side with other disciplines, which is why we have our own industrial design and 3D creation department, an internal ideation and development team, a double photography and video room and even a gastronomic marketing and graphic design area. We are also in constant contact and collaboration with external development centers, educational and research centers and leading collaborating companies in the specialized food industry. As a gastronomic R&D laboratory, we offer consultancy services in the hotel and catering industry, creation of offers and menus, development of gastronomic concepts, industrial development of tools or machines, and consultancy in the whole process of creation, evolution and improvement of products and ideas.

The aims of molecular gastronomy are to transform cuisine from an empiricial discipline into a real science.

We’re dedicated solely and exclusively to innovation, inspiration, trial and error, learning, surprise, technique, information and Eureka. A team focused on work, guided by experience and knowledge, strongly related to the gastronomy field and closely linked to the professionals who work in it: waiters, cooks, pastry chefs, chocolatiers, summillers, bakers, ice cream makers, bartenders, baristas… The raison d’être of 100%Lab is to grow accompanied by all of them to be at the forefront of gastronomic thinking, to learn, process and organize all the knowledge and information, and to share our results, absorbing inspiration from different disciplines and documenting it all with precision, in order to enjoy together with the whole sector the paths of the future.

To this end, we have a designated time for collaboration with external professionals: every month we allocate part of our time to receive visitors for training sessions, ideation, creativity, research, consulting, … companies, professionals and researchers who are invited to come to the Lab free of charge, to be trained in specific aspects or develop projects together in working sessions.
To learn more, check the calendar for upcoming training dates and fill out the registration form. Our office hours are Monday to Friday from 8:00 am to 4:00 pm, and can assist you in English and French (as well as Spanish and Catalan).
